Chilli and Chive Eggs with Smoked Salmon

Get yourself fired up for the day ahead with this kick-ass breakfast!


  • 1 large egg
  • 10g cheddar, grated
  • 1 tbsp chopped chives
  • ¼ red chilli, deseeded and finely chopped
  • 70g smoked salmon
  • 1 medium tomato, sliced
  • Freshly ground black pepper


  1. Mix the egg, cheese, chives and chilli in a large mug.
  2. Microwave on high for 45 secs, stir, then microwave for another 30-45 secs until cooked through.
  3. Serve with the smoked salmon and tomato, seasoned with black pepper.
  4. Smart tip: Omit the chilli if you prefer a slightly more sedate start to your day…
