Get yourself fired up for the day ahead with this kick-ass breakfast!
- 1 large egg
- 10g cheddar, grated
- 1 tbsp chopped chives
- ¼ red chilli, deseeded and finely chopped
- 70g smoked salmon
- 1 medium tomato, sliced
- Freshly ground black pepper
- Mix the egg, cheese, chives and chilli in a large mug.
- Microwave on high for 45 secs, stir, then microwave for another 30-45 secs until cooked through.
- Serve with the smoked salmon and tomato, seasoned with black pepper.
- Smart tip: Omit the chilli if you prefer a slightly more sedate start to your day…
