Crunchy Quinoa Salad

Quick and easy to put together, this protein-packed lunch will keep you on form all afternoon.


  • 70g quinoa
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • freshly ground black pepper
  • 80g carrot, finely chopped
  • 1 spring onion, sliced
  • 60g cherry tomatoes, halved
  • 30g mixed salad leaves
  • 1 tbsp chopped fresh basil


  1. Cook the quinoa according to the packet instructions.
  2. Meanwhile, in a large bowl, combine the balsamic vinegar, mustard and some ground black pepper, then stir in the rest of the ingredients, adding the quinoa when it’s ready.
  3. Smart tip: Switch the quinoa for 70g Puy lentils, cooked according to the packet instructions (288 kcal, 20g protein, 46g carbs, 3g fat, 9g fibre). Use pre-prepped quinoa or lentils for an even speedier meal.
