Rich Pork Casserole with Mushrooms and Soy Sauce

The ultimate one-pot wonder – let the slow cooker do the hard work, leaving you more time to spend on you!


  • 300g lean pork, cubed
  • 1 red onion, chopped
  • 1 clove garlic, crushed
  • 1 tsp ground ginger
  • ½ red chilli, deseeded and finely chopped
  • 200ml passata
  • 50ml dark soy sauce
  • 200ml hot beef stock
  • 1 whole star anise
  • 200g chestnut mushrooms, quartered
  • 100g green cabbage, sliced


  1. Put all the ingredients into a slow cooker.
  2. Stir well and cook on high for 4 hours or low for 6-8 hours.
  3. Smart tip: You could also try this with beef or lamb – go for the leanest cuts you can find.
